The Base

- Food processor (essential for blending dates into smooth paste)
- Large mixing bowl
- Flat plate or tray for chilling and coating

- If your dates are dry or firm, soak in warm water for 10 minutes. Drain completely and pat dry with paper towels — any excess moisture will make the mixture sticky and difficult to roll.
- Add dates to the food processor and blitz until a completely smooth, sticky paste forms — approximately 60 seconds. Scrape down the sides once halfway through. The paste should look glossy and hold together when pressed.
- Add rolled oats, SimplyPure Matcha Chocolate, almond butter, and optional extra matcha powder to the food processor. Pulse 8–10 times until everything is combined into a thick, uniform dough. Do not over-process — you want some oat texture remaining.
- Pinch a small amount between your fingers and press — it should hold together cleanly without crumbling. If it crumbles, add water one tablespoon at a time and pulse again until it binds.
- Transfer the mixture to a bowl and refrigerate for 15 minutes. This chilling step makes rolling significantly easier — the mixture firms up and becomes far less sticky to handle.
- Place desiccated coconut on a flat plate. Remove the chilled mixture from the fridge. Slightly dampen your palms with water — this prevents sticking. Divide into 12 equal portions (~40g each) and roll each firmly into a smooth ball.
- Immediately roll each ball in the desiccated coconut, pressing gently so it adheres evenly on all sides.
- Place on a lined tray and refrigerate for a further 30 minutes to firm up completely before serving or storing.
